Creamy Chicken Taquitos
Ingredients:
• 6 ounces cream cheese, softened
• ¼ cup sour cream
• 1 4.5 ounce can green chiles, well drained
• ½ teaspoon ground cumin
• ½ teaspoon chili powder
• ¼ teaspoon garlic powder
• ¼ teaspoon onion powder
• 1 cup finely shredded cheddar cheese
• 1 cup finely shredded pepper jack cheese
• 2 cups finely diced cooked chicken
• Kosher salt and fresh ground black pepper
• 8 8-inch flour or corn tortillas
• Vegetable oil for frying
Instructions:
1. Alright, first things first, grab a big bowl. We're gonna toss in the cream cheese, sour cream, green chiles, ground cumin, chili powder, garlic powder, onion powder, cheddar cheese, pepper jack cheese, and diced chicken. Give it all a good mix. Don't forget to sprinkle in some salt and pepper to taste.
2. Now, grab a tortilla and spoon a line of that creamy mixture right on the top third. Roll it up real tight and stick a toothpick in there to keep it together.
3. Time to heat up some oil. You'll want about 1 to 1 ½ inches in your skillet or pot. Once it's nice and hot, carefully drop in a few of those taquitos. Let 'em fry up for around 3 minutes on each side until they're golden brown.
4. Work in batches, don't overcrowd the pan. As each batch finishes up, transfer 'em to a plate or platter lined with paper towels to soak up any extra oil. Oh, and don't forget to take out those toothpicks before you dig in!
