 Blackberry Mini Cheesecakes


Just whipped up these divine Blackberry Mini Cheesecakes with an Oreo crust that's absolutely to die for! Perfect for satisfying your sweet tooth.


Ingredients:

Blackberry Sauce:

1 tablespoon lemon juice

1/4 cup sugar

16 oz fresh blackberries

Crust:


12 Oreo cookies

4 tablespoons melted butter

Cheesecake Batter:


8 ounces cream cheese

8 ounces mascarpone

1/3 cup sour cream

1/2 cup sugar

1 tsp vanilla extract

1/2 tsp almond extract

1/4 tsp salt

3 eggs

1/2 cup blackberry sauce

Directions:


Begin by letting all ingredients reach room temperature.

For the sauce, puree blackberries and cook with sugar and lemon juice on medium-high for 10-15 minutes to a coulis consistency. Strain if desired and cool.

Pulse Oreo cookies and melted butter for the crust, press into muffin tins, and bake at 325°F for 5 minutes.

Blend the cheesecake batter ingredients in a food processor until smooth, then mix in eggs and blackberry sauce briefly.

Fill muffin tins with batter, bake for 17-20 minutes, and allow to cool before chilling for 3-4 hours.

Serve with additional blackberry sauce.
