My Amish friend brought these guys to a recent potluck and everyone drooled over them!

Although delicious alone, these fritters are much better when shared. For a traditional Midwestern twist, try them with a hearty stew, a scoop of sour cream as an appetizer, or a side of fresh green salad or baked beans cooked gently in a skillet. A tall drink of lemonade or iced tea will round off the event nicely.

Fritters Made with Amish Onions

Makes about 10 to 12 fritters; serves a lot.

What you need:

2big, finely sliced sweet onions

One cup of all-purpose batter

2 teaspoons of baking soda

1/4 teaspoon of salt

one-half teaspoon of black pepper

For an extra smokiness, you may add 1/4 teaspoon of paprika.

one big egg


three-quarters of a cup of milk

Cooking oil made from vegetables

What to do:

 

Toss together the flour, baking powder, salt, pepper, and paprika in a large basin.


Lightly whisk the egg in a separate dish before combining it with the milk.

Mix the wet ingredients with the egg mixture until a batter is formed.

Toss in the thinly sliced onions and stir to coat them evenly.


An inch or so of oil heated to 365 degrees Fahrenheit in a pan.

Pour the batter into the hot oil in your favorite shape and cook for two to three minutes on each side, or until it becomes golden brown.

Set the fritters on paper towels to drain.

Warm it up and bask in the compliments.

 

Changes and Hints:

 

For more flavor, sprinkle in some fresh herbs, such as parsley or chives.

Add some heat with a pinch of cayenne pepper.

Crispiness may be preserved by reheating leftovers in the oven.

Instead of throwing away the spent oil, filter it and use it to enhance the taste of other meals.
