Recipe ingredients (for 12 servings):
1 cup (130g) of dates
Half a cup (80 grams) of dried apricots
(80g) of prunes, half a cup
70 grams, or half a cup, of cashews
one cup of dried coconut, or sixty grams
1-2 tablespoons of ground oats, if desired
Instructions
1. Let the Fruits Soak:
To soften, soak 1/2 cup of dried apricots and 1 cup of dates in boiling water for 10 minutes.
Step 2: Crush the Cashews:
Pulse 1/2 cup of cashew nuts in a food processor until they are very finely minced.
Third, purée the fruit:
Put 1/2 cup of prunes, the soaked apricots and dates, and the food processor on high speed.
To make sure everything is incorporated and blended, blend for about a minute or two.
Section 4: Dry Ingredients
Blend together 1 cup of shredded coconut, then add to the mixture.
Blend in one or two teaspoons of ground oats until the mixture reaches the consistency you prefer if it's too sticky.
Step 5: Form the Concoction:
Spread parchment paper on a baking sheet.
Press the mixture down with your hands to make a uniform layer and spread it out on the tray.
Even out the surface with the back of a spoon or spatula.
6. Cool off:
After 30 minutes, transfer the pan to the refrigerator or freezer to set the mixture.
7. Divide into slices:
Take the mixture out of the refrigerator or freezer after it has solidified.
Separate into small pieces or shape into bars.
8. Keep:
Put the energy bars in a sealed container and keep them in the refrigerator.
