Chocolate Cake with Fudge Frosting


Ingredients for the Chocolate Cake:


1 ½ cups (195 g) cake and pastry flour

1 ⅓ cups (295 g) superfine (quick dissolve) sugar

½ cup (60 g) Dutch process cocoa powder

¾ tsp (4 g) baking soda

¼ tsp (2 g) salt

½ cup (115 g) cool, unsalted butter, cut into pieces

½ cup (125 ml) hot, strong brewed coffee

½ cup (125 ml) milk

1 tsp (5 ml) vanilla extract

2 large eggs, room temperature

Ingredients for the Fudge Frosting:


12 oz (340 g) semisweet chocolate, chopped

1 ¾ cups (425 ml) whipping cream

½ cup (125 ml) sour cream

½ tsp (3 ml) vanilla extract

1 pinch salt

Instructions:


For the Chocolate Cake:


1. Preheat the Oven:


Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. Mix Dry Ingredients:


In a large mixing bowl, sift together cake and pastry flour, superfine sugar, cocoa powder, baking soda, and salt. Mix well.

3. Add Wet Ingredients:


Add the pieces of cool, unsalted butter to the dry mixture and mix until it resembles coarse crumbs.

In another bowl, combine hot brewed coffee, milk, and vanilla extract.

Gradually add the wet mixture to the dry mixture, mixing until smooth.

Add the eggs and beat until the batter is well combined.

4. Bake:


Pour the batter evenly into the prepared cake pans.

Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.

Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer the cakes to a wire rack to cool completely.

For the Fudge Frosting:


1. Melt Chocolate:


In a microwave-safe bowl or using a double boiler, melt the chopped semisweet chocolate until smooth. Allow it to cool to room temperature.

2. Whip Cream:


In a separate bowl, whip the whipping cream until soft peaks form.

3. Combine Ingredients:


Gently fold the cooled melted chocolate, sour cream, vanilla extract, and a pinch of salt into the whipped cream. Mix until well combined and smooth.

4. Frost the Cake:


Once the cakes are completely cooled, spread a layer of the fudge frosting on top of one of the cakes.

Place the second cake on top and frost the top and sides of the entire cake with the remaining frosting.

5. Enjoy:
