Chickpea Avocado Salad


Ingredients:

1 can chickpeas, drained and rinsed

1 medium avocado

half small red onion, finely chopped

1 celery stalk, chopped

1 tsp fresh lemon juice

salt and pepper, to taste


Instructions:

In a bowl coarsely crush chickpeas. Add avocado and mash and mix it with chickpeas. Mix in remaining ingredients. Fast vegan lunch. 

Great for sandwiches or scooped onto a bowl of grains of your choice with cucumber, shredded carrots, and tomatoes.
